Part of my duties for the shower was to bring some snacks. I wanted to keep some healthy options that were dairy free as the bride-to-be has a milk allergy. I started off by ordering two dozen custom decorated vegan cupcakes from the talented Sarah Thomas of Cuppitycakes Cupcakery in Innisfail. I gave her the freedom to choose the flavors and decorate it to fit the theme which was 'Naughty Knickers'. She did an amazing job, they were gorgeous, delicious and a huge hit with everyone! I also decided to bring some hummus and veggies for a delicious and healthy snack. Most people don't realize how easy hummus is to make. It honestly took me 10 minutes to make two giant batches of it.
1/2 cup sesame seeds
1 clove garlic
3 tbsp lemon juice
1 tsp salt
Throw in blender until smooth
I also made a roasted red pepper hummus, the recipe is the same as above but with the pepper. To roast, cut pepper in half and remove seeds. Place under the broiler until the outside starts to char. Remove from the oven and put in a sealed ziplock bag for a few minutes. This will loosen the skin so you can remove it. Throw that in with the rest of the ingredients and blend. So good!

I'm not going to lie, I legitimately didn't realize that hummus is that easy to make! I'm definitely going to try and make my own now! Plus then you can choose your own add-ins and I remember seeing some GREAT hummus recipes (hopefully I can find them again!).
ReplyDeleteI have LOTS of favorite things to bring to parties but one of my new favorite healthy ones is greek yogurt chicken salad and mini pitas so guests can serve themselves appetizer-sized bites. I also invented a broccoli dip where I substituted the sour cream for greek yogurt (I think it's still pretty fatty though!)
